Anyone who knows me and my gaggle of girls knows that they require an insane amount of adventure fuel! I won’t bother trying to explain it, it’s just something you have to experience to believe! Nevertheless, I am always looking for healthy and fun ways to keep their bellies satisfied. I love having nutrient dense snacks around that the girls can grab themselves and that are easy to bring on the go. Peanut butter is a great ingredient for these snacks so when I was given the chance to sample a peanut butter that puts all other peanut butter to shame, I said yes please!
As I waited for my sample of Pic’s Really Good Peanut Butter to arrive I couldn’t decide which recipe I wanted to make. True to my adventurous spirit, I decided to do a mash up and create something new. Truth be told, when the jar of creamy Pic’s arrived I was temped to eat the whole thing with a spoon, but I made peanut butter bars for the girls instead. These bars were inspired by peanut butter cookies from my childhood and a blueberry crumb bar from Smitten Kitchen. The bars are easy to make and eat! The girls were begging for bars all day long. The classic combo of salty and sweet from a pb&j sandwich is ready for adventure in these new bars!

Peanut Butter Adventure Bars
Ingredients
Peanut Butter Crumb
- ¼ cup granulated sugar
- ¼ cup brown sugar
- 1 tsp baking powder
- 1½ cups all purpose flour
- 1½ cups oat flour you can measure 1.5 cups oats and pulse in food processor
- ¼ tsp salt
- ¾ cup butter cold, cut into chunks
- 1 cup peanut butter Pic's Brand is my favorite, but any natural PB works well
- 1 egg
Berry Filling
- ¼ cup granulated sugar you can substitute fruit preserves for a less sweet version
- 3 tsp cornstarch you can substitute AP flour in a pinch
- 4 cups berries frozen or fresh
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan. (I like to line with parchment paper for easy removal)
- In a medium bowl, stir together ¼ cup sugar, ¼ cup brown sugar, 1½ cups flour, 1½ cups oat flour, baking powder & salt (or pulse in a food processor for less dishes). Use a fork, pastry cutter or food processor to blend in the butter, peanut butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
- In another bowl, stir together the sugar and cornstarch. Gently mix in the berries. Sprinkle the berry mixture evenly over the crust. Crumble remaining dough over the berry layer.
- Bake in preheated oven for about 30 minutes, or until top is slightly brown. This will vary by oven. Cover with foil if the top browns too quickly. Cool completely before cutting into squares.
